Prepare the cabbage:
- a. Remove the outer leaves of the cabbage head.
- b. Cut the cabbage into 8 equal wedges, keeping the core intact to hold them together.
Cook the bacon and onions:
- a. In a large skillet or frying pan, cook the bacon over medium heat until crispy.
- b. Remove the cooked bacon from the pan and set aside on a paper towel-lined plate.
- c. In the same pan, add the sliced onions and crushed garlic.
- d. Sauté the onions and garlic in the bacon fat until they become soft and translucent.
- e. Remove the onions and garlic from the pan and set aside.
Prepare the butter mixture:
- a. In a small saucepan, melt the butter over low heat.
- b. Add a pinch of salt and pepper to taste, and stir to combine.
Grill the cabbage:
- a. Preheat the barbecue grill to medium-high heat.
- b. Brush the cabbage wedges with the melted butter mixture on all sides.
- c. Place the cabbage wedges on the grill, core side down.
- d. Grill the cabbage for about 5-7 minutes per side or until lightly charred and tender.
Add bacon and onions:
- a. Once the cabbage is grilled, remove it from the grill and transfer to a serving platter.
- b. Crumble the cooked bacon and sprinkle it over the grilled cabbage.
- c. Top the cabbage with the sautéed onions and garlic.
Serve and enjoy:
- a. Serve the Australian Barbecued Cabbage and Bacon hot as a side dish or as a main course.
- b. Garnish with additional salt and pepper if desired.
