Ingredients

Biscuits
  • 8 oz butter softened or melted
  • 1/2 cup Sugar White
  • 1 1/4 Cups White Flour
  • 1/4 cup Cocoa
  • 1 teaspoon Vanilla
  • 2 cups weetbix
Icing
  • 1 1/2 cups sugar Chelsea white
  • 1 tbsp heaped tablespoon cocoa heaped
  • 1 tsp vanilla
  • 1 tsp butter melted
  • 1-2 tbsp water
  • 18 walnut halves

Equipment

  • Baking sheet
  • Mixing bowl
  • Wire rack
  • Parchment paper

Method

Preheat the oven to 350°F (175°C).
  1. a. Make sure the oven rack is in the middle position.
Biscuit Dough Preparation:
  1. a. In a large mixing bowl, combine the softened or melted butter with white sugar.
  2. b. Mix until the sugar is fully incorporated into the butter.
  3. c. Add plain white flour, cocoa, and vanilla to the bowl.
  4. d. Crumble the Weetbix into the mixture.
  5. e. Use your hands to knead the dough until all the ingredients are well combined and form a smooth texture.
Shaping the Biscuits:
  1. a. Take small portions of the dough and roll them into balls.
  2. b. Place the balls on a baking sheet lined with parchment paper.
  3. c. Flatten each ball slightly with your fingers to form a biscuit shape.
  4. d. Create a slight indentation in the center of each biscuit using your thumb.
Making the Icing:
  1. a. In a separate bowl, combine Chelsea white sugar, cocoa, and vanilla.
  2. b. Add melted butter to the dry ingredients and mix well.
  3. c. Gradually add water to the mixture, stirring until the icing is smooth and of a spreadable consistency.
Baking the Biscuits:
  1. a. Place the baking sheet with the prepared biscuits in the preheated oven.
  2. b. Bake for approximately 12-15 minutes or until the biscuits are firm to the touch.
  3. c. Avoid overbaking to keep the biscuits soft and chewy.
Adding Icing and Walnut Halves After Baking:
  1. a. Spoon a small amount of icing into the indentation of each biscuit.
  2. b. Top each biscuit with a walnut half, pressing it gently into the icing.
  3. Cooling and Serving:
  4. a. Remove the biscuits from the oven and let them cool on the baking sheet for a few minutes.
  5. b. Transfer the biscuits to a wire rack to cool completely.
  6. c. Once cooled, the Afghani Biscuits are ready to be served.
