Ingredients

Ground beef

  • 2 lb Ground beef
  • 2 tbsp Olive oil
  • ½ cup onions Red finely chopped
  • ½ cup Carrots finely chopped
  • ½ cup Celery finely chopped
  • 1 tsp Garlic finely minced
  • 1 tsp Paprika
  • 2 tbsp Tomato paste
  • ½ tbsp Rosemary fresh
  • ½ tbsp Thyme fresh
  • ½ cup Peas
  • 1 cup Chicken broth
  • ½ tsp Salt
  • ½ tsp Pepper

Biscuits

  • 2 cups All-purpose flour
  • ½ tsp Salt
  • ½ tsp Baking powder
  • ½ cup Butter (unsalted, chilled, cubed)
  • ¼ cup White cheddar (grated)
  • ½ cup Yellow cheddar (grated)
  • ¾ cup Buttermilk or Milk

Instructions

  • Saute the ground beef in oil in a pan or cast-iron skillet until browned. Sauté for 2 minutes more, then add the onions, carrots, celery, and garlic. Cook until the onions are transparent.
  • Use a cast-iron skillet that can go from cooktop to oven for ease of cleanup.
  • Next, add the herbs, spices, and tomato paste and bring to a simmer. The next step is to include the peas, chicken stock, and seasonings. Get it boiling, then turn the heat down low. Simmer, covered, for twenty to thirty minutes.
