Ingredients

  • 32 tortillas flour or corn
  • 1 stick butter
  • 2 lb alligator smoked gator meat
  • 2 lb cheese shredded queso fresco
  • 2 cilantro large bunch
  • 6 jalapenos
  • 6 avocados sliced
  • 1 head lettuce chopped
  • 2 tomatores diced

Instructions

Prepare the smoked gator meat:

  • a. Slice the 2 pounds of smoked gator meat into thin, bite-sized strips.
  • b. In a skillet, melt the stick of butter over medium heat.
  • c. Add the sliced gator meat to the skillet and sauté until it's heated through and slightly crispy, stirring occasionally.
  • d. Remove the cooked gator meat from the skillet and set it aside.

Prepare the taco fillings:

  • a. Crumble the 2 pounds of queso fresco.
  • b. Chop a large bunch of cilantro finely.
  • c. Slice the 6 jalapeños into thin rounds.
  • d. Slice the 6 avocados into thin slices.
  • e. Chop a head of lettuce into small pieces.
  • f. Dice 2 tomatoes.

Warm the taco tortillas:

  • a. Heat a dry skillet or griddle over medium-high heat.
  • b. Warm the taco tortillas in the skillet for about 20 seconds on each side, until they are heated through and slightly browned.
  • c. Keep the warmed tortillas covered with a clean kitchen towel to keep them warm.

Assemble the Louisiana Smoked Alligator Tacos:

  • a. Place a portion of the sautéed gator meat in the center of each taco tortilla.
  • b. Add a sprinkle of crumbled queso fresco on top of the meat.
  • c. Layer on sliced jalapeños for a spicy kick.
  • d. Place a few avocado slices on each taco.
  • e. Add some chopped lettuce for freshness.
  • f. Finally, top with diced tomatoes and a generous amount of chopped cilantro.
