1 lb. green beans 1 lb. bacon 1 1/2 tablespoon butter 1 onion chopped 8 oz prosciutto or speck 3 teaspoons cornstarch 1 cup water 1/2 teaspoon mustard ground 2 tablespoon brown sugar 2 tablespoon vinegar cider
Prepare the Green Beans: a. Trim the ends of the green beans and discard any damaged or discolored beans.
b. Rinse the green beans thoroughly under cold water to remove any dirt or impurities.
c. Fill a large pot with water and bring it to a boil over high heat.
d. Add the green beans to the boiling water and cook for about 4-5 minutes until they are tender yet still crisp.
e. Drain the green beans and immediately transfer them to a bowl filled with ice water to stop the cooking process.
f. Once the beans are cool, drain them again and set aside.

Prepare the Speck or Prosciutto: a. Cut the speck or prosciutto into small pieces or dice it, whichever you prefer.
b. In a large skillet, melt 1 tablespoon of butter over medium heat.

d. Increase the heat to medium-high and add the speck or prosciutto to the skillet.
e. Cook the speck or prosciutto for about 3-4 minutes until it becomes crispy and releases its flavors.
f. Remove the skillet from heat and set aside.
Prepare the Sauce: a. In a small bowl, whisk together cornstarch and water until the cornstarch dissolves completely.
b. In a separate saucepan, melt 1/2 tablespoon of butter over medium heat.
c. Add the ground mustard, brown sugar, and cider vinegar to the saucepan.
d. Pour the cornstarch mixture into the saucepan and stir well to combine.
e. Cook the sauce over medium heat, stirring constantly, until it thickens to a smooth consistency.
f. Once the sauce thickens, remove it from heat.
Combine and Cook: a. Return the skillet with the speck or prosciutto to the stove over medium heat.
b. Add the blanched green beans to the skillet and stir to combine with the speck or prosciutto.
c. Pour the prepared sauce over the green beans and stir gently to coat them evenly.
d. Reduce the heat to low and let the mixture simmer for about 5 minutes, allowing the flavors to meld together.
e. Stir occasionally to prevent sticking and ensure even cooking.
Serve: a. Transfer the German Speckbohnen to a serving dish or individual plates.
