Equipment

Ingredients

  • 16 ounces egg noodles 340 grams dry
  • 4 tablespoon butter medium size
  • 12 ounces cooked ham diced
  • ½ cup onion finely chopped
  • 2 1/2 cups cream or a combination of milk and cream
  • 8 eggs beaten
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper ground
  • 1 teaspoon paprika powder sweet
  • 1 teaspoon Cayenne Pepper
  • Pinch nutmeg grated
  • 8 ounces Swiss cheese grated
  • salt and pepper to taste

Instructions

Cook the egg noodles:

  • a. Fill a large pot with water and bring it to a boil.
  • b. Add a pinch of salt to the boiling water.
  • c. Carefully add the dry egg noodles to the pot.
  • d. Cook the noodles according to the package instructions until they are al dente.
  • e. Once cooked, drain the noodles and set them aside.

Prepare the ham and onion mixture:

  • a. In a large skillet, melt the butter over medium heat.
  • b. Add the diced ham and finely chopped onion to the skillet.
  • c. Sauté the ham and onion until they are lightly browned and fragrant.
  • d. Remove the skillet from the heat and set it aside.

Make the custard mixture:

  • a. In a mixing bowl, whisk together the milk (or heavy cream), beaten eggs, kosher salt, black pepper, sweet paprika powder, cayenne pepper (optional), and a pinch of grated nutmeg.
  • b. Continue whisking until all the ingredients are well combined.

Assemble the Schinkennudeln:

  • a. Preheat the oven to 350°F (175°C).
  • b. Grease a 9x13-inch baking dish with butter or cooking spray.
  • c. Spread half of the cooked egg noodles evenly in the bottom of the baking dish.
  • d. Sprinkle half of the ham and onion mixture over the noodles.
  • e. Sprinkle half of the grated Swiss cheese over the ham and onion.
  • f. Repeat the layers with the remaining noodles, ham and onion mixture, and grated Swiss cheese.
  • g. Slowly pour the custard mixture over the layers, ensuring it is evenly distributed.

Bake the Schinkennudeln:

  • a. Place the baking dish in the preheated oven.
  • b. Bake for approximately 30-35 minutes, or until the custard is set and the top is golden brown.
  • c. Remove the dish from the oven and let it cool for a few minutes before serving.

Notes

Use pre-cooked ham to save time.
Pre-shred the Swiss cheese to speed up the assembly process.
Cook the egg noodles al dente to prevent them from becoming too soft after baking.
Adjust the seasoning according to personal preference.
Sprinkle a pinch of unrefined salt on top before serving for added flavor.
Experiment with different cheese varieties for a unique twist.
