Instructions
Cook the egg noodles:
a. Fill a large pot with water and bring it to a boil.
b. Add a pinch of salt to the boiling water.
c. Carefully add the dry egg noodles to the pot.
d. Cook the noodles according to the package instructions until they are al dente.
e. Once cooked, drain the noodles and set them aside.
Prepare the ham and onion mixture:
a. In a large skillet, melt the butter over medium heat.
b. Add the diced ham and finely chopped onion to the skillet.
c. Sauté the ham and onion until they are lightly browned and fragrant.
d. Remove the skillet from the heat and set it aside.
Make the custard mixture:
a. In a mixing bowl, whisk together the milk (or heavy cream), beaten eggs, kosher salt, black pepper, sweet paprika powder, cayenne pepper (optional), and a pinch of grated nutmeg.
b. Continue whisking until all the ingredients are well combined.

f. Repeat the layers with the remaining noodles, ham and onion mixture, and grated Swiss cheese.
g. Slowly pour the custard mixture over the layers, ensuring it is evenly distributed.
Bake the Schinkennudeln:
a. Place the baking dish in the preheated oven.
b. Bake for approximately 30-35 minutes, or until the custard is set and the top is golden brown.
