Ingredients

  • 2 pound ground beef 80% recommended for moist Frikadellen; no leaner than 92%
  • 2 pound ground pork
  • 2 yellow onion medium very finely chopped
  • 4 slices slightly stale white bread about 2 oz or 50 g (can also use fresh croutons and let them sit out a day)
  • 1/4 cup warm water or milk
  • 2 egg large
  • 2 clove garlic minced
  • 1/4 cup parsley chopped fresh
  • 3 teaspoons salt
  • 1 1/4 teaspoon black pepper freshly ground
  • 2 teaspoon yellow mustard
  • 2 teaspoon marjoram dried
  • 2 teaspoon paprika Hungarian sweet
  • 1 teaspoon ginger ground
  • 1/4 teaspoon mace ground
  • 1/4 teaspoon coriander ground
  • 1/4 teaspoon cardamom ground
  • 6 tablespoons olive oil
  • 2 tablespoon butter
  • 8 kaiser rolls
  • salt and ground black pepper to taste

Instructions

In a large mixing bowl, combine the ground beef and ground pork. Mix them together until well combined.

  • a. Ensure that the meats are evenly distributed throughout.

Add the finely chopped onions to the meat mixture.

  • a. Stir the onions into the meat mixture until they are evenly incorporated.

Take the slices of slightly stale white bread and tear them into small pieces. Place the bread pieces in a bowl and pour warm water or milk over them. Let the bread soak for a few minutes until it becomes soft.

  • a. Gently squeeze out any excess liquid from the soaked bread.

Add the soaked bread to the meat mixture.

  • a. Mix it well, ensuring that the bread is evenly distributed throughout the meat.

Crack the eggs into a separate bowl and beat them lightly with a fork.

Add the minced garlic, chopped fresh parsley, salt, black pepper, prepared yellow mustard, dried marjoram, sweet Hungarian paprika, ground ginger, ground mace, ground coriander, and ground cardamom to the bowl.

Take a portion of the meat mixture and shape it into a patty, about the size of your palm.

  • a. Repeat this process until all the meat mixture has been used, forming multiple patties.

Heat olive oil and butter in a large skillet over medium heat.

  • a. Make sure the skillet is hot before adding the patties.

Carefully place the Frikadellen patties into the skillet, ensuring they are not overcrowded.

Cook the Frikadellen for about 5-7 minutes on each side, or until they are nicely browned and cooked through.

Once cooked, transfer the Frikadellen to a plate lined with paper towels to absorb any excess oil.

Serve the Frikadellen on kaiser rolls or your preferred choice of bread.
