Ingredients

  • 3 lbs. beef stew meat cut into bite-sized pieces
  • 2 to 3 tsp. salt
  • 8 cups beef broth or vegetable broth
  • 8 oz. raw peanuts skinless - about 1¾ cups, or use roasted if you cannot find raw peanuts
  • 4 potatoes cut into large cubes
  • 1 onion small diced
  • 2 carrots small diced
  • ½ green bell pepper large diced
  • ½ large red bell pepper large diced
  • ½ cup white rice
  • ½ cup green beans diced
  • 3 cloves garlic chopped
  • ½ tsp. cumin ground
  • ¼ tsp. black pepper
  • 3 oz. peas fresh or frozen
  • 1 stalk celery finely chopped
  • Pinch oregano dried

Instructions

In a large pot, heat some oil over medium heat. Add the beef stew meat and sprinkle it with salt. Brown the meat on all sides, stirring occasionally. This will take about 5 minutes.
