Ingredients

Pork Ribes

  • 8 lbs pork ribs approximately 8 pounds
  • 1 cup barbecue sauce

Spiced BBQ Glaze

  • 1 cup apple cider vinegar
  • 1 cups tomato ketchup (or Aussie tomato sauce)
  • 1 cup water (or use remaining apple cider!)
  • 1 Tbsp molasses orginal (not blackstrap)
  • 2/3 cup brown sugar
  • 3 tsp mustard powder
  • 3 garlic powder
  • 3 tsp Worcestershire sauce
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 tsp Tabasco or cayenne pepper (optional, for spiciness)

Instructions

Preparing the Pork Ribs:

  • a. Start by preheating your barbecue grill to medium heat.
  • b. Place the racks of pork ribs on a clean cutting board.
  • c. Use a sharp knife to remove the silver skin, a thin membrane on the bone side of the ribs. Peel it off carefully to expose the meat.
  • d. Cut the racks of pork ribs into individual portions, if desired, to make them more manageable during cooking.

Making the Spiced BBQ Glaze:

  • a. In a medium-sized saucepan, combine the apple cider vinegar, tomato ketchup (or Aussie tomato sauce), water (or remaining apple cider), molasses, brown sugar, mustard powder, garlic powder, Worcestershire sauce, salt, black pepper, and Tabasco or cayenne pepper (if desired).
  • b. Place the saucepan over medium heat and stir well to combine all the ingredients.
  • c. Bring the mixture to a gentle simmer and let it cook for about 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
  • d. Remove the saucepan from heat and set aside.

Marinating the Pork Ribs:

  • a. Place the pork ribs in a large, shallow dish or a resealable plastic bag.
  • b. Pour the barbecue sauce over the ribs, ensuring they are well coated on all sides.
  • c. If time allows, cover the dish or seal the bag and let the ribs marinate in the refrigerator for at least 2-4 hours, or preferably overnight. This allows the flavors to penetrate the meat.

Grilling the Pork Ribs:

  • a. Once the grill is preheated, lightly oil the grates to prevent sticking.
  • b. Remove the marinated pork ribs from the dish or bag and shake off any excess sauce.
  • c. Place the ribs on the grill, bone side down, and close the lid.
  • d. Grill the ribs for approximately 1 to 1.5 hours, turning them every 15 minutes, and basting them with the spiced BBQ glaze during each turn.
  • e. Cook the ribs until they are tender and the internal temperature reaches 165°F (74°C) or until the meat easily pulls away from the bone.

Resting and Serving:

  • a. Once cooked, transfer the grilled pork ribs to a cutting board or a serving platter.
  • b. Let the ribs rest for a few minutes to allow the juices to redistribute.
  • c. Slice the ribs into individual servings, if necessary.
  • d. Serve the Australian Barbecued BBQ Pork Ribs hot, accompanied by additional BBQ sauce if desired.
