I had the chance to try the Seychelles Daube de Banana Recipe, a regional specialty while visiting the Seychelles at a cooking class. To make a filling and flavorful main dish, bananas and a wide range of spices and vegetables are cooked together in a slow cooker or oven.

Instructions
Preparing the Ingredients:
Peel and slice 8 ripe bananas.
Cube 1 pound of beef stew meat.
Finely chop 2 medium onions.
Mince 4 cloves of garlic.
Grate 1 teaspoon of ginger.
Dice 2 tomatoes.
Sautéing the Aromatics:
Heat 1 tablespoon of vegetable oil in a large pot over medium heat.
Add the chopped onions and sauté until translucent.
Stir in the minced garlic and grated ginger, and cook for 1 minute.
Add the diced tomatoes and cook until softened.
Browning the Beef:
Push the sautéed aromatics to one side of the pot and add the cubed beef stew meat.
Brown the meat on all sides, stirring occasionally.
Adding the Spices and Liquids:
Sprinkle 1 teaspoon of thyme leaves, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of ground turmeric, 1/2 teaspoon of ground cinnamon, 1/4 teaspoon of ground cloves, and 1/4 teaspoon of cayenne pepper (optional) over the meat and aromatics.
Season with salt and black pepper to taste.
Stir in 2 tablespoons of tomato paste, 2 cups of beef broth, 2 bay leaves, 2 tablespoons of Worcestershire sauce, and 2 tablespoons of soy sauce.
Add 2 tablespoons of brown sugar and 1/4 cup of vinegar.
Mix everything well to combine.
Simmering the Daube de Banana:
Bring the mixture to a boil, then reduce the heat to low.
Cover the pot and let it simmer for 1 hour or until the beef is tender and flavors are well developed.
Stir occasionally to prevent sticking.
Adding the Bananas:
Gently add the sliced bananas to the pot, stirring them in.
Cook for an additional 10-15 minutes or until the bananas are heated through and softened.
Garnishing and Serving:
Remove the pot from the heat.
Sprinkle 1/4 cup of chopped fresh cilantro (coriander) leaves over the daube de banana.
Serve the dish hot with steamed rice or bread.
Notes
Use ripe bananas that are soft and sweet, as they will add more flavor to the dish.Cut the beef into small cubes for even cooking and to make it easier to eat.You can also use a slow cooker to cook the dish for several hours, which will make the beef even more tender.The dish can be made ahead of time and reheated, which can help save time and make meal planning easier.
