Ingredients

  • 4 large onions thinly sliced
  • 4 tablespoons unsalted butter
  • 4 cups vegetable broth
  • 2 cups water
  • 2 teaspoons granulated sugar
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste

Instructions

  • In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.
  • Once the onions are caramelized, add the sugar and continue to cook for an additional 2 minutes, stirring well.
  • Pour in the vegetable broth and water, then add the dried thyme and bay leaf. Season with salt and black pepper to taste.
  • Bring the soup to a boil, then reduce the heat to low and let it simmer for about 20 minutes to allow the flavors to meld together.
  • Remove the bay leaf from the soup and discard.
  • Ladle the soup into bowls and serve hot.
