22. Bosnian Palacinke Recipe

Equipment

  • Large mixing bowl
  • whisk
  • Non-stick frying pan
  • Spatula
  • Plate for stacking cooked palacinke

Ingredients

  • 2 cups all-purpose flour
  • 4 eggs
  • 2 cups milk
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup vegetable oil

Optional Fillings:

  • Nutella and banana
  • Jam or jelly
  • Cottage cheese and sugar
  • Spinach and feta cheese
  • Ground walnuts and honey

Instructions

  • In a large mixing bowl, whisk together the flour, sugar, and salt.
  • In a separate bowl, beat the eggs and add them to the flour mixture. Mix well.
  • Add the milk, vanilla extract, and vegetable oil to the mixing bowl and whisk until smooth and well combined.
  • Heat a non-stick frying pan over medium heat. Pour in about 1/4 cup of batter and swirl the pan to spread the batter evenly.
  • Cook until the edges of the pancake begin to lift and the bottom is golden brown, then flip and cook the other side until golden brown.
  • Repeat with the remaining batter, stacking the cooked palacinke on top of each other on a plate.
  • Fill each palacinke with your desired filling and roll it up.
  • Serve hot and enjoy!

Notes

Tips and Tricks

Use a ladle to pour the batter onto the pan for evenly sized palacinke.
Use a non-stick frying pan to prevent sticking and make flipping easier.
If the batter is too thick, add a splash of milk to thin it out.
Experiment with different fillings to find your favorite combination.
