Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup honey
  • 1/4 cup milk
  • 1 cup chopped peeled kiwifruit
  • 1 tablespoon grated fresh ginger

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9-inch (23 cm) cake pan with butter and dust with flour.
  • In a medium bowl, whisk together the flour, baking powder, ground ginger, cinnamon, nutmeg, and salt.
  • In a separate large bowl, cream the butter and sugar together until light and fluffy using an electric mixer.
  • Add the eggs, one at a time, and beat well after each addition.
  • Gradually stir in the honey and milk until well combined.
  • Slowly add the flour mixture into the wet ingredients and mix until just combined.
  • Fold in the chopped kiwifruit and grated ginger.
  • Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Serve and enjoy!
