Ingredients

  • 2 lbs fresh salmon fillet skin-on
  • 1/2 cup coarse sea salt
  • 1/2 cup granulated sugar
  • 1 tablespoon whole black peppercorns crushed
  • 1/4 cup fresh dill chopped
  • 1/4 cup aquavit optional
  • 1 lemon sliced

Instructions

  • Rinse the salmon fillet under cold water and pat dry with paper towels.
  • Mix together the sea salt, sugar, and crushed peppercorns in a bowl.
  • Place the salmon fillet skin-side down in a large dish and sprinkle the salt-sugar mixture over it, pressing it into the flesh.
  • Sprinkle the chopped dill and aquavit (if using) over the top of the salmon.
  • Place the lemon slices over the top of the salmon.
  • Cover the dish with plastic wrap and place in the refrigerator for at least 24 hours.
  • After 24 hours, remove the salmon from the dish and rinse off the salt-sugar mixture and dill.
  • Pat the salmon dry with paper towels and slice thinly.
  • Serve immediately or store in an airtight container in the refrigerator for up to 3 days.

Notes

Tips and Tricks

Make sure to use high-quality salmon fillet for the best results.
Use a sharp knife to slice the gravlax thinly.
Serve the gravlax with traditional Scandinavian accompaniments such as rye bread, mustard-dill sauce, and pickled cucumbers.
