28. Costa Rican Patacones Recipe 3

Equipment

  • Frying pan
  • Tostonera (or a flat surface such as a cutting board and a can)
  • Paper towels

Ingredients

  • 4 green plantains
  • Salt to taste
  • Vegetable oil for frying

Instructions

  • Peel the plantains and slice them into rounds, about 1 inch thick.
  • Heat up enough oil in a frying pan over medium-high heat to cover the bottom of the pan.
  • Fry the plantain slices for about 2-3 minutes on each side, until they are lightly golden and crispy.
  • Remove the plantains from the pan and place them on a paper towel to drain any excess oil.
  • Using a tostonera (or a flat surface such as a cutting board and a can), flatten the plantains into thin discs.
  • Dip the flattened plantains into a bowl of salted water and then return them to the hot oil.
  • Fry the plantains for an additional 2-3 minutes on each side until they are crispy and golden brown.
  • Remove the plantains from the pan and place them on a paper towel to drain any excess oil.
  • Serve hot and enjoy!

Notes

Tips and Tricks

Make sure to use green plantains as they are more starchy and less sweet than ripe plantains.
Use a tostonera to flatten the plantains easily, but if you don't have one, you can use a flat surface such as a cutting board and a can.
Be careful when frying the plantains, as they can burn quickly. Keep an eye on them and adjust the heat as necessary.
