Equipment

  • Wooden spoon or spatula

Ingredients

  • 2 cups green lentils rinsed and drained
  • 1 large onion diced
  • 4 garlic cloves minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp olive oil
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion, garlic, and ginger and sauté for 5-7 minutes, or until the onion is translucent.
  • Add the cumin, coriander, cinnamon, turmeric, and cayenne pepper and cook for 1-2 minutes, or until fragrant.
  • Add the lentils and vegetable broth and bring to a boil.
  • Reduce the heat and let the lentils simmer for 20-30 minutes, or until tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro.

Notes

Tips and Tricks

Rinse and drain the lentils before cooking to remove any dirt or debris.
Grate the ginger using a microplane or fine grater to make it easier to incorporate into the dish.
Taste and adjust seasoning as needed throughout the cooking process to ensure the lentils are flavorful.
