Equipment

Ingredients

  • 1 lb. ground beef
  • 1 onion chopped
  • 1 green bell pepper chopped
  • 2 cloves garlic minced
  • 2 tomatoes chopped
  • 2 tbsp. tomato paste
  • 1 cup green beans cut into 1-inch pieces
  • 1 cup corn kernels
  • 1 cup water
  • 2 tbsp. vegetable oil
  • 1 tsp. salt
  • ½ tsp. black pepper

Instructions

  • Heat the oil in a large skillet over medium heat.
  • Add the ground beef and cook, stirring occasionally, until browned, about 5-7 minutes.
  • Add the onion, green bell pepper, and garlic to the skillet and cook for another 3-4 minutes.
  • Add the tomatoes, tomato paste, green beans, corn, water, salt, and black pepper to the skillet.
  • Stir well to combine all the ingredients.
  • Reduce the heat to low and let the mixture simmer for 20-25 minutes or until the vegetables are tender and the flavors have melded together.
  • Serve hot with rice or tortillas.

Notes

Tips and Tricks

Chop the vegetables ahead of time to save prep time.
Use a non-stick skillet to prevent the ground beef from sticking to the pan.
Double the recipe to make extra for leftovers or to freeze for later.
