2 skillets (one for sautéing the vegetables and one for frying the eggs)

Ingredients
2cupscooked white rice
2cupscooked red beans
1/2cupfinely chopped onion
1/4cupfinely chopped green bell pepper
1/4cupfinely chopped red bell pepper
2garlic cloves, minced
2tbsp.vegetable oil
8corn tortillas
8eggs
Salt and pepper to taste
Instructions
In a large mixing bowl, mix the cooked white rice and red beans together.
In a skillet over medium heat, sauté the chopped onion, green bell pepper, red bell pepper, and minced garlic in vegetable oil until the onions are translucent.
Add the rice and bean mixture to the skillet and mix everything together until it's heated through. Add salt and pepper to taste.
In another skillet, fry the eggs to your desired level of doneness.
Heat up the corn tortillas in the microwave or in a separate skillet.
Serve the casamiento rice and bean mixture on a plate, topped with a fried egg, and with a heated corn tortilla on the side.

Tips and Tricks
Cook the rice and beans ahead of time to save time.Use canned beans if you don't have time to cook dried beans.Use frozen or pre-chopped vegetables to save time on chopping.
