For the Sauce:
1/2cupmayonnaise
1/4cupsour cream
1/4cupchopped fresh parsley
1/4cupchopped fresh cilantro
1/4cupchopped green onions
2tbsp.lemon juice
1tspsalt
1/2tspblack pepper
1/4tspcayenne pepper
Instructions
In a large bowl, combine the olive oil, lemon juice, red wine vinegar, chopped parsley, chopped oregano, chopped cilantro, minced garlic, smoked paprika, ground cumin, dried oregano, salt, and black pepper. Mix well to create the marinade.
Add the thinly sliced beef sirloin, chicken breasts, and pork tenderloin to the marinade. Stir to coat the meat evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight.
Preheat your grill to medium-high heat.
Thread the marinated meat onto the skewers, alternating the types of meat to create a mixed grill.
Brush the grill grates with oil to prevent the meat from sticking. Grill the skewers for 10-15 minutes, turning occasionally, until the meat is cooked through and lightly charred.
While the meat is grilling, prepare the sauce. In a small bowl, combine the mayonnaise, sour cream, chopped parsley, chopped cilantro, chopped green onions, lemon juice, salt, black pepper, and cayenne pepper. Mix well.
Serve the grilled meat skewers with the sauce on the side.
