Instructions
In a large bowl, whisk together the fish sauce, soy sauce, brown sugar, minced garlic, chopped lemongrass, and black pepper until the sugar is fully dissolved.
Add the sliced beef to the marinade and stir to coat the beef evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight if possible.
Preheat your grill or broiler to medium-high heat.
Thread the marinated beef onto the soaked bamboo skewers, leaving a small gap between each piece to ensure even cooking.
Grill or broil the skewers for 3-4 minutes per side, or until the beef is cooked to your desired doneness.
Serve the beef skewers hot with steamed rice and your choice of vegetables.
