Ingredients
  

  • 1 cup almond flour 4.5 oz
  • 1/4 cup coconut flour 1 oz
  • 2 tablespoons grated ginger 0.4 oz
  • 1/4 cup Manuka honey 3.4 oz
  • 1/4 cup almond butter 2.2 oz
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/4 cup unsweetened shredded coconut 0.8 oz
  • 1/4 cup crystallized ginger finely chopped (1.8 oz)

  • Baking sheet
  • Parchment paper

Method
 

  1. In a large mixing bowl, combine almond flour, coconut flour, grated ginger, Manuka honey, almond butter, vanilla extract, and sea salt. Mix until well combined.
  2. Add unsweetened shredded coconut and crystallized ginger to the mixture, and stir until evenly distributed.
  3. Using a cookie scoop or spoon, scoop out portions of the mixture and roll into balls.
  4. Place the balls on a baking sheet lined with parchment paper, and refrigerate for at least 30 minutes.
  5. Serve and enjoy!

Notes

Tips and Tricks

It may be helpful to wet your hands with water before rolling the mixture into balls to prevent sticking.
Chill the mixture in the refrigerator before rolling to make it easier to handle.
