- In a large mixing bowl, combine almond flour, coconut flour, grated ginger, Manuka honey, almond butter, vanilla extract, and sea salt. Mix until well combined.
- Add unsweetened shredded coconut and crystallized ginger to the mixture, and stir until evenly distributed.
- Using a cookie scoop or spoon, scoop out portions of the mixture and roll into balls.
- Place the balls on a baking sheet lined with parchment paper, and refrigerate for at least 30 minutes.
