  • 4 cups grated sweet potatoes
  • 1 can coconut milk
  • 1 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup all-purpose flour
  • 2 tbsp margarine

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x13-inch baking dish with margarine.
  3. In a large mixing bowl, combine the grated sweet potatoes, coconut milk, brown sugar, cinnamon, nutmeg, salt, and flour. Mix well.
  4. Pour the mixture into the prepared baking dish.
  5. Dot the top of the mixture with margarine.
  6. Bake in the preheated oven for 1 hour or until a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let cool before serving.
