Ingredients

  • 1 1/2 cup rice basmati
  • 3 tsp oil
  • 3/ 4 tbsp sugar brown
  • 1 1/2 tsp turmeric
  • 3 tbsp raisins or sultanas/golden raisins
  • 3 cup water

Instructions

  • Rice should be thoroughly rinsed under flowing water until the water becomes clear. Alternatively, place the rice in a basin or pot filled with water and agitate it with your hands before draining. Repeat a minimum of once.
  • Combine the rinsed rice, sugar, turmeric, and raisins in a vessel. After adding the water and stirring to combine the ingredients, cover the vessel.
  • Bring the pot to a boil over medium-high heat; reduce to a simmer and cook for approximately 10 minutes, or until all of the water has been absorbed. Mix ingredients with a stir prior to serving.

Notes

Use fresh and good-quality spices for the best flavor.
Rinse the rice before cooking to remove excess starch.
Toast the rice in the spices and oil for a few minutes before adding water for enhanced flavor.
Adjust the level of spiciness by controlling the amount of chili used.
