Ingredients

Cake

  • 10½ oz sugar
  • 1 tsp cinnamon powder
  • 2 tsp baking powder
  • 12½ oz cooking oil
  • 4 carrots medium carrots grated
  • 4 eggs
  • 1 tsp salt
  • 1 tsp bicarb of soda
  • 2 cups all-purpose flour
  • pecan nuts optional
  • raisins optional

Topping

  • 8 oz cream cheese tub
  • 2 cups sugar icing
  • 2 tbsp butter

Instructions

  • The sugar should be added gradually to the beaten eggs.
  • Add in the oil.
  • Put the dry stuff in after sifting.
  • The addition of carrots (and possibly almonds or raisins) is recommended if used.
  • Mix the ingredients well.
  • Transfer to a greased baking dish.
  • Put the dish in an oven set to 180 degrees Celsius (360 degrees Fahrenheit) and bake for 40 minutes.
  • The cake must be allowed to cool before the frosting is added. (You can make a glaze by just combining the components).
