Pap Instructions
First, get a big pot and fill it with water.
Do not bring the water to a rolling boil. The formation of tiny bubbles signals that it is ready to be served.
Mix the water and cornmeal together to eliminate lumps. The maize meal and water combination should have a silky texture. (If the water is already boiling, adding the maize meal will cause an explosion of a white magma-like stuff.)
Reduce heat to low, cover, and simmer for 10 minutes before adding the sweet corn and heavy cream.
To make it soft and fluffy, step 5 calls for an additional 20 minutes of simmering with the lid on.
Tomato Relish Instructions
Fry the onion chunks in 2 tablespoons of olive oil over medium heat until they are tender and caramelized.
Put in some Worcestershire sauce, sugar, balsamic vinegar, salt, and pepper along with the diced tomato.
Cook at a low boil for 3 minutes. Mix it up every so often.
Notes
Stir the pap regularly to prevent lumps.Use fresh corn for the best flavor.Adjust the tomato relish seasoning to your taste. You can add chopped herbs like cilantro or parsley for extra freshness.Serve the relish warm for better taste.Use a non-stick saucepan for making the relish.Use a lid while cooking the pap to control thickness.
