Ingredients

  • 3 lb alligator thawed alligator sirloin
  • 1 lb bacon
  • 6 tsp olive oil
  • 1 1/2 cup milk
  • 6 tbsp 3 Spices Sea Dog Rub
  • 3 tsp garlic powder

Instructions

Prepare the alligator sirloin:

  • a. Thaw the 3 lb frozen alligator sirloin in the refrigerator until fully thawed.
  • b. Once thawed, cut the alligator sirloin into 1-inch cubes.

Marinate the alligator:

  • a. In a bowl, combine 6 tsp of olive oil and 3 tbsp of the 3 Spices Sea Dog Rub.
  • b. Add the alligator cubes to the bowl and toss to coat them evenly with the marinade.
  • c. Cover the bowl and refrigerate for at least 30 minutes to marinate.

Prepare the bacon:

  • a. Take 1 lb of bacon and cut it into small pieces.
  • b. Cook the bacon pieces in a skillet until they are crispy.
  • c. Remove the bacon from the skillet and place it on paper towels to drain excess grease.

Skewer the alligator:

  • a. Preheat your grill to medium-high heat.
  • b. Thread the marinated alligator cubes onto skewers, alternating with the cooked bacon pieces.

Grill the alligator skewers:

  • a. Place the skewers on the preheated grill.
  • b. Grill the alligator for about 5-7 minutes on each side or until it's cooked through and has a nice char.
  • c. While grilling, you can baste the skewers with any remaining marinade for added flavor.

Make a dipping sauce:

  • a. In a small saucepan, combine 1 1/2 cups of milk, 3 tbsp of 3 Spices Sea Dog Rub, and 3 tsp of garlic powder.
  • b. Heat the mixture over low heat, stirring constantly, until it's heated through and well combined.

Notes

Marinate the alligator for at least 30 minutes for flavor.
Soak wooden skewers in water to prevent burning.
Use an instant-read thermometer to check alligator's doneness.
Baste the skewers while grilling for extra flavor.
Prepare the bacon separately for crispy texture.
