Equipment

Ingredients

  • 2 1/2 lbs. pork tenderloin trimmed of silver skin and excess fat
  • 2 pound ham thinly sliced cooked
  • Kosher salt and freshly ground black pepper
  • 8 cloves garlic minced (about 2 tablespoons)
  • 1/2 cup olive oil
  • 4 tablespoons orange guide 1 orange
  • 2 tablespoon lime juice 2 limes
  • 21 teaspoon oregano dried
  • 1 teaspoon cumin ground
  • 4 tablespoons butter melted

For the Sandwiches:
  • 8 tablespoons unsalted butter softened unsalted
  • 2 tablespoon yellow mustard
  • 1 cup mayonnaise
  • 8 rolls
  • 64 dill pickles

Instructions

Marinating the Pork:

  • a. Start by seasoning the trimmed pork tenderloin with kosher salt and freshly ground black pepper.
  • b. In a bowl, mix minced garlic, olive oil, orange juice, lime juice, dried oregano, and ground cumin to create the marinade.
  • c. Place the pork tenderloin in a resealable plastic bag or a shallow dish and pour the marinade over it.
  • d. Seal the bag or cover the dish, ensuring the pork is evenly coated with the marinade.
  • e. Let it marinate in the refrigerator for at least 2 hours or preferably overnight.

Roasting the Pork:

  • a. Preheat your oven to the recommended temperature.
  • b. Remove the marinated pork from the refrigerator and allow it to come to room temperature.
  • c. Place the pork on a roasting pan and pour any excess marinade over it.
  • d. Roast the pork in the preheated oven until it reaches the desired internal temperature and is tender and juicy.

Assembling the Sandwiches:

  • a. In a small bowl, mix softened unsalted butter and yellow mustard until well combined.
  • b. Spread the butter-mustard mixture on the split sides of each sweet roll.
  • c. Layer each sandwich with cooked ham, marinated roasted pork, Swiss cheese slices, and pickles.
  • d. Press the sandwiches together gently to ensure all the flavors meld together.

Grilling the Sandwiches:

  • a. Preheat a panini press or a skillet over medium heat.
  • b. Place the assembled sandwiches in the panini press or skillet and cook until the bread is golden and crispy, and the cheese is melted.
  • c. If using a skillet, you can press the sandwiches down with a spatula for even cooking.

Serving:

  • a. Once the sandwiches are grilled to perfection, remove them from the heat source.
  • b. Cut the sandwiches in half diagonally to make them easier to handle and serve.
