Ingredients

  • 10 peaches sliced
  • 3 cups water

Instructions

  • e. Remove the saucepan from heat and let the peach syrup cool to room temperature.

Prepare the Melba Sauce:

  • a. In a blender or food processor, puree 4 cups of fresh raspberries until smooth.
  • b. Strain the raspberry puree through a fine-mesh sieve to remove the seeds.
  • c. Add ¼ cup of confectioners' sugar to the strained raspberry puree and mix well.
  • d. Set the melba sauce aside.

Assemble the Peach Melba:

  • a. Place a scoop of vanilla ice cream into serving bowls or dessert glasses.
  • b. Arrange a generous amount of sliced peaches on top of the ice cream.
