Ingredients

  • 2 cups cassava flour
  • ½ cup butter, softened
  • 2 eggs
  • cups grated cheese (mozzarella, cheddar or a mixture)
  • ¼ cup milk
  • 1 tsp baking powder
  • Salt and black pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, mix together the cassava flour, baking powder, salt, and black pepper.
  • Add the softened butter and mix until well combined.
  • Add the eggs, grated cheese, and milk. Mix until a dough forms.
  • Knead the dough for a few minutes until it is smooth and pliable.
  • Divide the dough into 8 equal parts and roll each part into a ball.
  • Place the balls on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes, or until the Chipas are golden brown.
  • Let the Chipas cool for a few minutes before serving.

Notes

Tips and Tricks

Make sure the butter is softened before mixing it with the dry ingredients.
Use a food processor to grate the cheese quickly and easily.
To make the dough easier to handle, wet your hands with water before rolling it into balls.
To get an even and crispy texture, make sure to space the Chipas evenly on the baking sheet.
