Ingredients

  • 3 - 4 Tbsp fresh lemon juice
  • ¼ Cup olive oil extra virgin or light
  • 1 tsp maple syrup
  • 1 pinch salt
  • 1 pinch black pepper
  • 3 Tbsp minced shallots optional

Instructions

  • For best results, blend all of the ingredients together in a small blender to create an emulsion and fully incorporate the shallot. If you don't have a shallot on hand, just combine everything in a small bowl and whisk.
  • Blend all ingredients in a small blender on high until completely smooth and creamy.
  • Adjust the taste by adding more salt, pepper, lemon juice, olive oil, maple syrup, or any other ingredient you deem necessary.
  • Sprinkle on hot or cold salads, roasted vegetables, and anything else right away! Put it in the fridge for three to four days. Be sure to give it a good shake before using, as the oil may solidify in the fridge.
