In a mixing bowl, combine the chicken thighs, chickpea flour, garlic paste, ginger paste, chopped garlic cloves, cumin powder, coriander powder, turmeric powder, red chili powder, lemon juice, mustard oil, fresh mint leaves, black pepper, and yogurt. Mix well to ensure all the chicken pieces are coated with the marinade. Let it marinate for at least 1 hour to allow the flavors to infuse. a. Place the chicken thighs in the mixing bowl. b. Add the chickpea flour to the bowl. c. Add the garlic paste and ginger paste. d. Toss in the chopped garlic cloves. e. Sprinkle the cumin powder, coriander powder, turmeric powder, and red chili powder over the chicken. f. Squeeze in the lemon juice and add the mustard oil. g. Tear the fresh mint leaves and add them to the marinade. h. Season the mixture with fresh ground black pepper and a pinch of salt. i. Finally, pour in the yogurt and thoroughly mix everything together. 2. Preheat the grill or barbecue to medium-high heat. a. Turn on the grill or barbecue and set it to medium-high heat. b. Allow the grill to preheat for a few minutes. 3. Thread the marinated chicken pieces onto skewers. a. Place the chicken skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and slightly charred. a. Carefully place the chicken skewers on the preheated grill. b. Cook the chicken for approximately 6-7 minutes on each side, turning occasionally for even cooking. c. Keep an eye on the chicken to avoid overcooking or burning. 6. Once the chicken is cooked through and nicely charred, remove the skewers from the grill. a.
