Ingredients (8 Servings) 2 Chicken Thighs, Bite Sized 2 tablespoon Chickpea flour 2 teaspoon Garlic paste 1 1/2 teaspoon Ginger paste 3 Garlic cloves, Chopped ½ tsp Cumin Powder 1 tsp Coriander Powder ½ tsp Turmeric Powder 1 teaspoon Red chili powder 1 tablespoon Lemon Juice 2 tablespoon mustard oil 12 leaves of Fresh Mint leaves ½ tsp Black Pepper, fresh ground 1 tbsp Oil ½ cup Yogurt Salt, To Taste Instructions 1. In a mixing bowl, combine the chicken thighs, chickpea flour, garlic paste, ginger paste, chopped garlic cloves, cumin powder, coriander powder, turmeric powder, red chili powder, lemon juice, mustard oil, fresh mint leaves, black pepper, and yogurt. Mix well to ensure all the chicken pieces are coated with the marinade. Let it marinate for at least 1 hour to allow the flavors to infuse. a. Place the chicken thighs in the mixing bowl. b. Add the chickpea flour to the bowl. c. Add the garlic paste and ginger paste. d. Toss in the chopped garlic cloves. e. Sprinkle the cumin powder, coriander powder, turmeric powder, and red chili powder over the chicken. f. Squeeze in the lemon juice and add the mustard oil. g. Tear the fresh mint leaves and add them to the marinade. h. Season the mixture with fresh ground black pepper and a pinch of salt. i. Finally, pour in the yogurt and thoroughly mix everything together. 2. Preheat the grill or barbecue to medium-high heat. a. Turn on the grill or barbecue and set it to medium-high heat. b. Allow the grill to preheat for a few minutes. 3. Thread the marinated chicken pieces onto skewers. a. Take the marinated chicken pieces and thread them onto skewers in a straight line, leaving a little space between each piece. b. Continue threading until all the chicken pieces are used. 4. Brush the grill grates with oil to prevent sticking. a. Take a brush or folded paper towel and dip it in oil. b. Carefully brush the hot grill grates with the oil to prevent the chicken from sticking. 5. Place the chicken skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and slightly charred. a. Carefully place the chicken skewers on the preheated grill. b. Cook the chicken for approximately 6-7 minutes on each side, turning occasionally for even cooking. c. Keep an eye on the chicken to avoid overcooking or burning. 6. Once the chicken is cooked through and nicely charred, remove the skewers from the grill. a. Check the chicken for doneness by cutting into a piece to ensure there is no pink center. b. Once the chicken is fully cooked and has a nice charred appearance, remove the skewers from the grill. 7. Serve the Afghani Chicken Kebabs with a side of yogurt sauce, naan bread, or rice. a. Place the cooked chicken skewers on a serving platter. b.
